1/2 c. quinoa, cooked (see cooking directions below)
1/2 c. black beans
1/8 c. shredded cheddar cheese
1/8 c. salsa
- Place black beans in a pot on the stove on low heat and simmer them until they are warm (you can also put them in the microwave for 30 sec.)
- Next, put cooked quinoa in a bowl. Place the beans over the quinoa and top it off with a bit of cheddar cheese and salsa. Enjoy!
Directions for Cooking Quinoa:
Place ¼ c. of uncooked quinoa into a pot with ½ c. of water. Place the cover on the top of the pot and bring it to a boil. Cook the quinoa until all water has absorbed and quinoa is fully cooked and puffy. If water has absorbed and quinoa is too chewy, add a tablespoon of water at a time. Fluff with a fork.
