Watermelon, Feta, & Basil:

We had this at a Mediterranean restaurant the other day and fell in love! The combination of the juicy watermelon, fresh basil, and salty feta is the perfect sweet, salty and savory combo! It makes for a great summer appetizer! However, if you’re serving this to guests, you may want to wait until just before they arrive to prepare it—otherwise, there may not be much left by the time they arrive! (A lesson we learned, it was a little too good ;)).

 Pssst… We learned the same lesson after serving our Strawberries and Feta and our Pears With Walnuts and Goat Cheese!

 

Watermelon, Feta, & Basil:

 Serves 1

 

Ingredients:

1.5 cup cubed watermelon

1 T. nonfat feta

1 T. Basil, Chopped

 

Directions:

Place cubed watermelon in a bowl. Add feta on top and garnish with fresh mint. Enjoy!
